Glaze for Days

We almost forgot. So to go along with the Mochi Donut Molds we are going to include some simple glazes with stuff most people have at home!

Plain Clear Glaze 

Ingredients

Mass(g)

Volume

Powdered Sugar

400g

2 cups

Whole Milk 

50g

¼ cup

Vanilla Extract

10g

1tbsp

(Warning: this makes the equivalent of cup or so of glaze, feel free to lessen by half)

  • Mix all ingredients into bowl
  • Apply to donuts directly.
    • Drizzle using a fork for a less sweet variety.

This will be your typical donut shop glaze minus the malto-dextrin, pectins, invert syrups, and the likes. We can go into more depth on their functions another day. 

Matcha Glaze

Ingredients

Mass(g)

Volume

Powdered Sugar

400g

2 cups

Heavy Whipping Cream 

120g

½ cup

Vanilla Extract

10g

1 tbsp

Ito-en Matcha Powder

 10g (Or to taste)

 1Tbsp

 

  • Sift Matcha powder and Powdered Sugar into bowl.
  • Add wet ingredients to bowl and whisk together thoroughly.
  • Dip donuts and let set

So if you noticed, for matcha we are using heavy whipping cream instead of milk. The higher fat content allows for better harmony since Matcha has astringent properties. You can read more in depth here on our matcha mochi pancake recipe!

 

Strawberries and Cream Glaze

Ingredients

Mass(g)

Volume

Powdered Sugar

400g

2 cups

Heavy Whipping Cream 

60g

¼ cup

Vanilla Extract

10g

1 tbsp

Fresh Strawberries

 10g

 2 pieces

 

  • Start by mashing up strawberries with a fork until you reach the desired consistency
    • I prefer chunky, but if you want a smooth consistency feel free to keep going.
  • Add all ingredients and whisk until fully incorporated
  • Dip donuts and let set!

So three simple but extremely easy donut glaze recipes to try with the mochi donuts. We will be adding more as we go forth, but we hope these will keep you guys busy until then. As a mentor once told me, "There are no rules when it comes to creativity; only guidelines." so get as creative as your child or inner-child can get!
